
Diavolo pizza dough

Ingredients

400g flour

8g fresh baker's yeast

7g fine salt

1 pinch of sugar

2 tablespoons extra virgin olive oil

220ml warm water
Instructions
- Mix the yeast with 100 ml of warm water and 50 g of flour in a medium bowl.
Let it ferment for at least 30 minutes, covering the bowl with a damp cloth. - In another bowl, mix the remaining flour with the salt, sugar, and extra virgin olive oil. Once well blended, add it to the yeast mixture and slowly add the remaining water.
- Knead the dough thoroughly until smooth and supple. Form 4 balls of dough into 4 large bowls, covering each with plastic wrap. Let them rise in the refrigerator for at least 24 hours (ideally 48 to 60 hours).
- Once the dough balls are ready to use, increase the temperature of your pizza oven, flatten the balls by hand on your floured work surface and create a ½ cm thick dough and top with your favorite ingredients!
